Tortellini Soup!

Ingredients:

  • 2x, Can Chunked Tomato
    • 2x Tbps Tomato Paste (optional)
  • 1x, Bag of fresh Spinach (250g, 2x if you want)
  • 1x, Large Onion, chopped
  • 0.5x, Large Zucchini, diced
  • 1x, Box of Mushrooms, chopped (400g)
  • Garlic (as much as you want)
  • 2L+, Broth of choice
  • 2x, Large bag of Tortellini (1kg)
  • 1 Cup Carbohydrate: Rice, Small Noodle, Bulgar, etc (200g)
  • Italian Spices: oregano, basil, rosemary, thyme.
  • Chili flakes for some kick.

Steps:

  1. In a large pot, sauté until soft: onions, then zucchini, then garlic, then mushrooms. Reduce liquid introduced from mushrooms. Salt and pepper to taste.
  2. Add spinach and stir until softened.
  3. Add canned tomatoes and tomato paste. Reduce a bit and spice italian, primarily Oregano. Add chili flakes if you want.x
  4. Add broth and bring to a simmer.
  5. Add optional carbohydrate.
  6. Cook soup until carbohydrate is finished. 10-15 minutes.
  7. Cook Tortellini. Store the tortellini and separate.
  8. Spice soup to taste again. Don't forget salt. MSG is a good additive.
  9. Combine soup and some tortellini. Serve with freshly grated parmesean.
