Ingredients:
- 2x, Can Chunked Tomato
- 2x Tbps Tomato Paste (optional)
- 1x, Bag of fresh Spinach (250g, 2x if you want)
- 1x, Large Onion, chopped
- 0.5x, Large Zucchini, diced
- 1x, Box of Mushrooms, chopped (400g)
- Garlic (as much as you want)
- 2L+, Broth of choice
- 2x, Large bag of Tortellini (1kg)
- 1 Cup Carbohydrate: Rice, Small Noodle, Bulgar, etc (200g)
- Italian Spices: oregano, basil, rosemary, thyme.
- Chili flakes for some kick.
Steps:
- In a large pot, sauté until soft: onions, then zucchini, then garlic, then mushrooms. Reduce liquid introduced from mushrooms. Salt and pepper to taste.
- Add spinach and stir until softened.
- Add canned tomatoes and tomato paste. Reduce a bit and spice italian, primarily Oregano. Add chili flakes if you want.x
- Add broth and bring to a simmer.
- Add optional carbohydrate.
- Cook soup until carbohydrate is finished. 10-15 minutes.
- Cook Tortellini. Store the tortellini and separate.
- Spice soup to taste again. Don’t forget salt. MSG is a good additive.
- Combine soup and some tortellini. Serve with freshly grated parmesean.
